  • 1 pint oysters
  • 2 cups whole milk
  • 4 slices country bacon, sliced in small squares
  • 1 cup celery, chopped
  • ½ cup onions, chopped
  • 3 tbsp all-purpose flour
  • ½ tsp salt

Instructions
 

  • Strain the shucked oysters using a wire mesh colandor to cathc any fragments of oyster shells that may be present. Save the oyster liquid and set aside.
  • Heat a large saucepan to medium-high heat and add in bacon pieces. Stir occasionally until bacon starts to crisp. This will take about 5 minutes. Add in onions, celery, and potatoes. Stir for a couple of minutes, then reduce heat to medium.
  • While continuing to stir, add in the dry ingredients; flour, Old Bay, and salt. Cook for 2 minutes, then slowly pour in reserved oyster liquid.
  • Add in milk, stir to mix and reduce heat to low simmer. Cook for 15 minutes, then add in oysters.
  • Cook for 5 additional minutes and stir occasionally to prevent ingredients from burning or sticking.
  • Ladle into a shallow soup bowl and top with fresh parsley, hot sauce, or whatever your preference is.
